It may still be 100 degrees outside, but by every Halloween I am ready for cooler temps. I know it is getting cooler outside, but it doesn’t really feel Fall-like when the kids can’t wear elaborate, fuzzy, well-layered Halloween costumes without also over-heating. But I just pretend that it is really cool, crisp and Fall-like outside by making Fall inspired dinners.
Here are three, super easy dinner recipes to feed your family before running all around the neighborhood collecting bags of candy. Each of these recipes is fairly healthy so you will have no guilt sneaking one…or two….or a dozen of those mini Snickers after the kids go to bed. All three of these recipes use the crock pot, because nothing screams “Fall” more than dinner simmering all day in a crock pot.
- Easiest, best pulled pork in the world. Even if this recipe took a ton of work, I would still make it. It is that good. Plus EVERY SINGLE member of my family loves it. This never happens. NEVER.
- Super fast chili recipe. So this one is healthy before I top it with loads of shredded cheese and sour cream, but I am sneaking in a ton of veggies that I otherwise could not get my kiddos to eat.
- Easy beef tacos. This recipe is versatile because you could use this meat in tacos, quesadillas, on top of salads, or it’s amazing on its own!
