I am in love with all things cilantro, and this is the season for it! I stopped by The Simple Farm and picked up a bunch and it smells amazing.
This is a very easy recipe. Trust me – if I can do it, you can too!
- 1/4 C olive oil
- 1 C light corn syrup
- 2 Tbsp. cilantro (remove stems)
- 2 Tbsp. Gourmet Garden garlic
- 1/2 tsp. black pepper
- 2 fillets skinless tilapia
Preheat the oven to 375 degrees.
Spray a baking sheet with cooking spray and lay out the tilipia on the baking sheet.
Mix your glaze together and pour generously over the tilipia.
I made a simple bell pepper, eggplant, squash, and zucchini side – cooked with olive oil and black pepper over medium heat for ten minutes. I wanted something simple and fresh so that we could really enjoy the cilantro and honey flavors.
This is such a great season here in Arizona, with so many fresh veggies from local farms to choose from. Hope you enjoy the meal!
