I am so excited to share about the SCC with all of you Mamas out there. The Scottsdale Cooking Club has officially commenced! We had our first meeting on Wednesday and let me tell you, it was so much fun. Not only was it relaxing to leave the kiddos with Dad and have a night off… but also the fellowship we shared as we tried different dishes was so needed! I don’t know about you, but with two kiddos under the age of 2 this mama needs some adult conversation! After a full day of changing diapers, attempting to clean the house and listening to my sweet yet sassy two year old say “no” repeatedly… I could not wait to sit in one place for a whole hour and enjoy a meal with friends! It was great! No one spit up on me and everyone kept their food on their plates and out of my hair!
There were so many great entrees… delicious meals, appetizers and desserts… I have the privilege of sharing two with you today!
The Mini Turkey Meatloaves were a hit! Each individual meatloaf is made in a muffin tin! How smart is that? They are easy to pack up and take for lunches, or toss some in your freezer and zap them in the microwave when you need a quick meal for your kiddos. You can find this recipe here! Thank you Carlene!
Another dish that was so yummy and so easy to make… Chantelle’s Enchiladas. A perfect combination of sweet enchilada sauce and delicious shredded chicken! Another great left over! This is great to make for a dinner party since there are 8 servings!! That recipe can be found here! Thank you Kristen!

We tried the “Meatloaf Muffins” tonight and they were a hit! I had to make a few revisions based on stuff on hand…diced carrots instead of peppers, General Tsao sauce from Trader Joe’s instead of Worchestershire sauce…but they were so yummy and the kids enjoyed peeling the cupcake wrappers off before eating them.
