Try the new trend of spiralizing veggies for a healthy alternative to pasta.

I have been eating Paleo for about 6 months now (that means no pasta or bread, NONE, not one bite). So you can imagine how very excited I was to try the WonderVeg Vegetable Spiralizer which can turn vegetables into a healthy mock pasta.

The device is very easy to use. It has a variety of plates that can slice vegetables for different uses. You can make thin noodles, thick spirals and ribbons. The extra plates are kept in the spiralizer device for easy storage.

Here is my recipe for easy, healthy zucchini pasta to serve with any pasta sauce and homemade meatballs or pesto sauce.

(Try this pesto sauce from Trader Joes, so delicious!)

2-3 zucchinis. Slice off one end of each zucchini.IMG_4884

Use the WonderVeg to slice zucchini into long noodles.

Place the noodles on top of a couple of paper towels. Then salt the noodles. The salt and paper towels will remove excess water. Cook the zucchini noodles in the microwave for two minutes.

(You can also quickly cook the noodles in a pot of bowling water for one to two minutes instead of the microwave or saute on the stove top).

Drain and serve with sauce.

I have also used the WonderVeg to slice cucumbers and carrots for delicious salads.
