Stay in Date Night | Pan Seared Pork Chops with Bleu Cheese Sage Butter, Mashed Sweet Potatoes and Sautéed Apples

I LOVE everything about fall, and I mean everything! The weather starts to cool down, you can open your windows, light candles, drink cider…the list doesn’t end…but most of all I LOVE Fall food!!  It is just delicious!

 

So the other night I was really feeling inspired to bring the fall season to the dinner table. This dish just screams AUTUMN!  It makes you want to make your house nice and cozy, cuddle with your guy and just enjoy the company, the conversation, and the FOOD!

 

Pan Seared Pork Chops with Bleu Cheese Sage Butter, Mashed Sweet Potatoes and Sautéed Apples

Pork Chops:

 

2 Thick Cut (1 ½-2in) Center Cut Pork Chops (bone-in)

Salt and Pepper

2 Tbs. Olive Oil

 

Directions:

Drizzle Pork chops with Olive oil and season with salt and pepper.  Heat a Grill Pan on high heat and sear pork chops for about 10 minutes on each side, or until done

 

Bleu Cheese Sage Butter

2 Tbs Butter, room temperature

¼ cup crumbled Bleu Cheese

4 leaves minced fresh sage

 

Directions:

Combine all ingredients, set aside

 

Mashed Sweet Potatoes

3 sweet potatoes, cubed

1 tbs butter

¼ brown sugar

2 tbsp honey

Directions:

  1. Boil your sweet potatoes until tender, about 15 minutes, drain.
  2. Mix in butter, brown sugar and honey, mash with fork to desired consistency

 

Sautéed Apples and Onion

1 Tbs. butter

2 apples, thinly sliced

¼ purple onion, thinly sliced (you can use less onion than apple, it tends to have a strong flavor)

2 Tbs. brown sugar

(Note: pears also work great in this recipe)

 

Directions:

Hear butter over medium heat, once melted add apples and onion, sauté until tender. Stir in brown sugar and cook for additional two minutes, allowing apples to caramelize.

 

So that’s it. Once Pork chops are done, dollop the bleu cheese butter on top so that it melts, and serve alongside sweet potatoes and apples. YUM!
